Creole Dipping Sauce 8 servings 3 tablespoons peanut oil 1 cup finely minced onion 1 cup finely minced, seeded green bell pepper 3 tablespoons flour 2 cups tomato concasse 1 cup dry white wine 1 teaspoon strained fresh lime juice 1 teaspoon vinegar 1/4 teaspoon salt, to taste 1/4 teaspoon black pepper, to taste 1/4 teaspoon liquid hot pepper sauce, to taste Heat the oil in a skillet, over medium heat. Add the onions and bell peppers. Heat and stir for 4-5 minutes. Add the flour, heat and stir to a pale golden color. Add the tomato concasse and wine, heat and stir until thickened. Remove from heat. Stir in the lime juice and vinegar. Season to taste with salt, pepper, and hot pepper sauce. Serve at room temperature.
