Conch Chowder
8 servings

2  cups finely ground conch
4  cups peeled red potatoes, diced
8  cups water
1/4  pound sliced bacon, diced
2  cups minced onions
1  cup green bell pepper, seeded and diced
1  cup tomato concasse
1  teaspoon salt, to taste
1/4  teaspoon freshly ground white pepper

Combine conch, potatoes, and water in a saucepot, over medium heat.  Bring to 
a boil, reduce heat, and simmer for 30 minutes.  Meanwhile, heat bacon in a 
skillet, over a medium heat.  Heat and stir for 4 minutes, add onions and 
bell peppers, heat and stir for 5 minutes.  Add bacon mixture to the conch 
mixture, mix well.  Bring to a boil, over medium heat.  Reduce heat and 
simmer for 45-60 minutes, until conch is tender and chowder has thickened.  
Serve hot.
