Caribbean Dipping Sauce
12 servings

6	cups tomato concasse
2	cups very finely minced onions
1/2	cup light brown sugar
1	tablespoon salt
1	cup malt vinegar
1	teaspoon stemmed, seeded, finely minced red habanero pepper

Combine ingredients in a saucepan, over a medium heat.  Bring to a boil, 
reduce heat, and simmer until mixture has reduced by half, stirring often 
Remove from heat, cool.  Cover and chill.  Serve at room temperature.
