Quick Curry

6 servings

1/4 cup unsalted butter
3 cups cooked, cleaned tiger prawns
1/4 cup milk
1 cup crushed pineapple
2 teaspoons curry powder
1/2 teaspoon dried dill weed
1/4 cup flour
6 cups hot cooked rice


Melt butter in saucepan. Remove from heat; stir in flour and seasonings. Add a little milk and stir to blend. Gradually stir in the remaining milk. Cook and stir until mixture boils and thickens. Add shrimp (or clams or chicken) and pineapple tid-bits. Heat through. Serve on rice. If desired, serve with condiments such as chopped peanuts, coconut and chutney

1 pineapple, peeled, cored, and cut to a medium dice
3 bananas, peeled and bias-sliced to 1/2-inch
1/2 cup freshly shredded coconut
1/2 cup finely chopped macadamia nuts
2 cups pineapple flavored yogurt
3 to 2 tablespoons strained fresh lemon juice

SPRINKLE FRUIT WITH LEMON JUICE
COMBINE FRUIT, COCONUT, AND MACADAMIA NUTS-TOSS LIGHTLY TO MIX
COVER AND CHILL
SERVE CHILLED, WITH PINEAPPLE YOGURT TO THE SID

ROAST @ 325 DEGREES FOR 5-10 MINUTES, UNTIL GOLDEN
HEAT BUTTER IN A SMALL SKILLET, OVER A MEDIUM FLAME
STIR IN SOY, GINGER, GARLIC SALT, AND LEMON JUICE
REMOVE FROM HEAT
ADD NUTS AND TOSS TO COAT EVENLY
ARRANGE NUTS IN A SINGLE LAYER BACK ONTO COOKIE SHEET
ROAST @ 325 DEGREES FOR 5 MINUTES
SERVE WARM OR AT ROOM TEMPERATUR
