Spicy Sweet Potato Bake 8 servings 3 pounds sweet potatoes 3/4 cup light brown sugar 1/4 cup unsalted butter 1/2 teaspoon ground cinnamon 1/2 teaspoon freshly grated nutmeg 1/4 teaspoon salt 1 cup milk Combine sweet potatoes and water to cover in a saucepan, over a high heat. Bring to a boil, reduce heat, and simmer for 20-25 minutes, until tender. Drain well and allow to cool. Remove and discard peels. Mash potatoes to a smooth puree. Combine mashed potatoes with all but 2 tablespoons brown sugar. Stir in the butter, cinnamon, nutmeg, salt, and milk, mix well. Spoon into a buttered casserole. Top with the remaining brown sugar and bake @ 400 degrees for 30 minutes. Serve hot.
