Sofrito 8 servings 3/4 cup peanut oil 1 cup medium diced, seeded green bell pepper 1 cup medium diced, seeded mild green chilies 3 cups medium diced onions 1/3 cup minced garlic 8 sprigs cilantro 1 teaspoon oregano 1 cup medium diced cooked ham 1/4 teaspoon powdered saffron, or ground annatto seed Combine one-third of the peanut oil, bell peppers, chilies, onions, garlic, cilantro, and oregano in a food processor, process to finely chop. Add the ham, pulse to mix well. Heat remaining peanut oil in a large skillet, over a medium heat. Sprinkle with powdered saffron or annatto seeds. Add the pureed mixture, mix well. Heat to a boil, reduce heat, and simmer for 12-15 minutes, stirring often. Remove from heat, cool. Cover and chill until needed.
