Jamaican Jerk Wings 12 servings 3 pounds chicken wings 1 cup finely minced onion 2/3 cup finely minced scallions 2 tablespoons finely minced garlic 1/2 teaspoon ground thyme 1 teaspoon salt 1 teaspoon ground allspice 1/4 teaspoon freshly grated nutmeg 1/2 teaspoon ground cinnamon 1/4 cup finely minced, seeded hot chili pepper 1 teaspoon black pepper 1/8 teaspoon Jamaican hot sauce, to taste 2 tablespoons soy sauce 1/4 cup peanut oil Disjoint chicken wings, reserving tips for stock. Combine remaining ingredients in a food processor, process to a very thin puree. Combine with chicken wings in a bowl, rubbing mixture into wings with your hands (wear rubber gloves). Cover and chill for 2-48 hours. Place wings onto a rack in a foil-lined roasting pan. Roast @ 450 degrees for 30-35 minutes, turning and basting often. Serve at room temperature.
