Game Hens with Citrus Sauce 2 servings 2 cups unsalted chicken stock 1 cup unsalted beef stock 1/4 each grapefruit, juiced and zested 1/2 each orange, juiced and zested 1/2 each lime, juiced and zested 1/4 cup sugar 3 tablespoons water 2 each Rock Cornish game hens, about 1-1/2 pound each 2 tablespoons unsalted butter Combine chicken and beef broth or stocks in a saucepan, over medium heat. Bring to a boil and simmer for 25-30 minutes, until reduced by 3/4. Combine grapefruit, orange, and lime juices and zests with water and sugar in a small saucepan, over low heat. Bring to a boil and simmer for 20 minutes. Add to the stock reduction. Return to a boil and simmer until reduced to by 1/2. Remove breasts from hens, remove and reserve wing tips and remaining parts of hen for another use. Season breast portions with salt and pepper. Heat butter in a sauté pan, over medium heat. Add breast portions and brown for 3-5 minutes per side, until golden. Remove to serving plates. Pour reduced sauce into browning skillet and stir briefly to deglaze pan and reheat. Pour sauce over breast portions. Serve hot.
