Cuban Stuffed Chicken 4 servings 4 each whole chicken breasts 1/2 cup mango chutney 1 cup dry French breadcrumbs 3/4 teaspoon red pepper flakes 1/2 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1/2 cup spiced rum 1/2 cup unsalted butter Remove skin and bones from breasts. Split in half and place between sheets of plastic wrap. Pound to flatten slightly. Place 1 tablespoon chutney onto each breast. Fold over filling and secure with a wooden pick. Combine breadcrumbs, red pepper flakes, salt, and black pepper, mix well. Moisten chicken with rum. Coat evenly with breadcrumb mixture. Place onto a piece of waxed paper and chill for 10-15 minutes. Heat butter in a large skillet, over medium heat. Add chicken and brown well on all sides. Remove to a hotel pan, top with remaining rum and breadcrumbs. Cover with foil, bake @ 350 degrees for 20 minutes. Remove to a heated serving platter. Serve hot.
