Caribbean Steamed Fish 4 servings 1 cup plain yogurt 1/2 cup mild, seeded red pepper flakes 1 teaspoon very finely minced ginger 1 whole bay leaf 2 whole cloves 1/2 teaspoon ground cinnamon 1/4 teaspoon sugar 1 tablespoon melted unsalted butter 1 pound firm white fish fillet Combine ingredients (except fish), mix well. Pour over fish, cover and chill for 6-24 hours, turning occasionally. Drain well, discarding marinade. Place fish on a plate and place into a bamboo steamer. Place over boiling water and steam for 10 minutes, until tender and opaque in the thickest part of fish. Serve hot.
