Caribbean Fried Chicken 50 servings 3 cups dark rum, flamed 1/3 cup rice wine vinegar 3 cups soy sauce 1 tablespoon finely grated lime zest 3 cups strained fresh lime juice 2 tablespoons prepared horseradish 52 each chicken leg quarters 2 tablespoons salt 2 tablespoons white pepper 1 tablespoon ground ginger 12 cups flour Combine rum, vinegar, soy sauce, lime zest, lime juice, and horseradish, mix well. Add chicken, cover, and chill for 2-96 hours. Combine salt, pepper, ginger, and flour, mix well. Remove chicken from marinade and dredge in seasoned flour. Heat oil to 375 degrees, add chicken and fry until well browned on all sides. Drain on a cooling rack and blot with paper towels. Transfer to a hotel pan, bake @ 300 degrees for 30 minutes.
