Smoky BBQ Wings 12 servings 36 each chicken wings 1 teaspoon salt 1/2 teaspoon fresh ground black pepper 1 cup wood chips, soaked in water 2 sprigs rosemary, soaked in water 1 1/2 cups Bulls eye barbecue sauce Remove tips from wings, reserve for another use. Separate wings into joints and/or prep for concubines. Season with salt and pepper. Prepare a bed of hot coals to one side of covered BBQ. Place wings over coals; sear and turn until golden. Remove to portion of grill away from coals. Drain wood chips and rosemary; place directly onto coals, cover BBQ and smoke wings for 30 minutes. Remove cover and turn wings; baste with BBQ sauce. Cover and cook wings another 30 minutes, basting every 10 minutes. Remove to serving platter. Serve hot, warm, or at room temperature.
