Smoked Roasted Breast of Turkey 50 servings 25 pounds turkey breast 1/2 gallon Italian dressing without oil 2 each foil roasting pans gallon wood chips Marinate turkey in italian dressing for 4-72 hours. Place onto a roasting rack. Place rack into a foil-lined roasting pan. Wrap wood chips in foil, to make a pouch or envelope, poke holes in top of foil pouch. Place pouch on top of a pile of medium-hot coals. Place roasting pan onto grill, as far away from coals as possible. Cover and smoke roast, to an internal temperature of 180 degrees. Remove from grill. Remove from the bone, wrap in foil, and allow to rest for at least 60 minutes, before carving Serve hot, warm, or at room temperature.
