Crostini with Shrimp Spread 25 servings 1 pound cream cheese, room temperature 1/8 pound bay shrimp 1/2 teaspoon onion powder 1 teaspoon garlic powder 1/4 teaspoon Jane's salt 3 tablespoons minced parsley 3 pounds butter 1-2 cup olive oil 1/4 cup garlic, finely minced 3 each baguettes, thinly sliced Combine cream cheese, bay shrimp (reserve a small amount for garnish), onion powder, garlic powder, and Jane's salt in a food processor, process to a smooth puree. Add parsley and pulse just to mix lightly. Cover and chill for 4-96 hours. Heat 1/4 of the butter and all of olive oil in a sauté pan, over a medium-low heat, add garlic; heat and stir for 4-5 minutes, until well softened and fragrant without coloring. Add remaining butter; heat until melted, remove from heat. Brush butter/garlic mixture onto both sides of baguette slices. Arrange onto a shallow baking sheet. Bake @ 325 degrees for 8-10 minutes, until crisp and golden. Remove from oven and allow to cool. Blot briefly with paper towels. Serve spread slightly chilled with crostini to the side.
