Coriander Chicken Wings 8 servings 24 each chicken wings, disjointed 4 cloves garlic 1 teaspoon ground coriander 1/4 teaspoon fresh ground black pepper 4 tablespoons olive oil 1 teaspoon turmeric 1/4 cup strained fresh lemon juice 2 teaspoons lemon zest, blanched 1/2 teaspoon salt salt, to taste fresh ground black pepper, to taste Wash chicken parts well. Lace into a stockpot, cover with water or stock, and place over a high heat. Bring to a boil, remove from heat, cover, and allow to stand for 20 minutes. Remove from liquid, drain and place chicken into a covered bowl or container. Combine garlic, coriander, pepper, olive oil, turmeric, lemon juice and zest, and salt mix well. Pour over chicken, cover, and chill for 60-90 minutes. Remove from marinade. Season with salt and pepper. Grill or broil for 4-5 minutes per side until no longer pink in the center. Remove to a serving platter or place onto a bed of couscous. Serve hot.
