Spicy African Chicken 4 servings 4 each chicken leg quarters 2 tablespoons peanut oil 2 cups small dice tomatoes 2 cups thinly sliced sweet red onions 1 teaspoon crushed red chili pepper 1/2 teaspoon salt 1 teaspoon ground thyme Heat oil in a skillet, over a medium heat. Add chicken and sauté for 15 minutes, until browned on all sides. Remove chicken with a slotted spoon, set aside. Add tomatoes, onions, red pepper lakes, salt, and thyme. Mix well, bring to a boil, reduce heat, and simmer for 5 minutes. Add chicken, turn to coat well cover and simmer, over a medium heat, for 30-40 minutes, until juices run clear, when chicken is pricked with a fork. Remove chicken to a heated serving platter. Skim carefully to remove fat. Pour pan drippings over chicken serve hot, with hot cooked rice.
